Wine merchant Sarment debuts in Singapore with recipe calendar featuring top chefs

Sarment debuted in Singapore last week with the launch of their Icons 2015 Calendar.

The premium wine merchant was established in London in 2007 and has since branched out to China, Hong Kong, Macau and Southeast Asia.

Aligning with its endorsement of modern luxury lifestyle, the company features 12 of Asia’s top chefs in this year’s edition of the recipe calendar — four are based in Singapore.

It’s probably the first time Singapore’s seeing its most lauded restaurant maestros all cleaned up magazine shoot-style.

Jaan’s Julien Royer, Tippling Club’s Ryan Clift, Tetsuya Wakuda of Waku Ghin and Frédéric Colin of Brasserie Gavroche join the likes of Hong Kong’s Mango Tsang and Hong Kong’s Paul Pairet in offering up the how-tos of some of their own signatures — immaculately dressed in Ermenegildo Zegna, no less.

Following the same format as 2014’s, each chef represents one month of the year (they get to pick their own on a first-come-first-serve basis) and reveals the recipe (or a version of it sans trade secrets) for at least three of their signature dishes. Sarment of course, suggests the wine to go with each meal.

At a press event held in My Private Chef, guests sampled some of the local stars’ dishes, including a hand-me-down classic by Chef Frédéric, the pike fish quenelle, and Julien Royers’ too-pretty-to-eat scallop with horseradish snow.

As suspected many of the recipes are ambitious, with some requiring a vacuum machine and others using country specific produce, but the idea is for the average kitchener to get a peek of the top chefs’ innerworkings and have fun trying to get the same results, far-reaching as they may be.
