Tsuta Singapore lives up to its Michelin-starred hype with gourmand ramen at affordable prices

COCONUTS HOT SPOT — Yessiree all you ramen aficionados, the once and future king of all ramen has arrived in the form of Japan’s Tsuta — the only Michelin-starred ramen eatery in the world

We’ll just cut to the chase. Yes, we’ve tried it, and yes it was probably be the best bowl of ramen we’ve ever had.

Or at least it was for casual ramen eaters like us — ramen veterans might think otherwise.

The highly anticipated eatery has established its very first overseas outlet (and only the second in the world) at Pacific Plaza, which will open its doors to the public this Sunday, Nov 6. Knowing Singaporeans and our love for queueing up for good food, it’s best that you get there WAY before the restaurant officially launches at 11am. In fact, if you’re anything like the Japanese, you’ll be queuing up at 6am for a ticket to dine.

Unlike the original establishment founded by Chef Yuki Onishi however, Tsuta here seats twice the amount of patrons — 18 seats in total. Fortunately for us all, the award-winning ramen will stay true here with only two choices of soup bases: the Shoyu soba and Shio soba.

But you must be dying to know if they live up to the hype — and to that, we answer hell yes. It all boils down to three perfect elements: absolutely al dente ramen, heartily gourmand soup bases and exquisitely cooked char siu. We hate clichés as much as the next guy but you really can taste the amount of care and love invested in each bowl.

It’s not as cheap as fellow Michelin-starred eatery Hong Kong Soya Sauce Chicken Rice & Noodle, but Tsuta still offers an affordable entry to world-class cuisine. $15 well net you either the basic Shoyu Soba (black truffle sauce base) and the Shio Soba (chicken-seafood blend base) which comes with a single slice of char siu (quality Canadian pork collar, fam), bamboo shoot, as well as leek pureed in truffled oil. Since you’ll be queuing up for quite a bit anyway, might as well go for the full experience with the Char Siu Ajiama Shoyu Soba or the Char Siu Ajiama Shio Soba ($22.80 each). They come with four generous slices of delectable pork shoulder, flavoured egg and the usual shebang.

To operate at the most optimal level of speed and efficiency, patrons order dishes by way of a vending machine (yes, like McDonald’s custom burger kiosks), at which you can pay through NETS, credit card and even cash. Who needs awkward conversations with waiters and cooks, amirite?

But again, like we said, Tsuta’s Michelin-starred ramen tastes amazing to us filthy casuals — but don’t let our opinion hype up your anticipation too much. Yeah, yeah, it’s a world-class restaurant and all, but enter without expectations and you’ll be just fine with a very, very good bowl of ramen.

Tsuta is at #01-01 Pacific Plaza, 9 Scotts Road, 6734-4886. Open 11am to 6pm Nov 6-11; open 11am to 10pm daily from Nov 12 onwards.
